Tradition met innovation as the Pampanga State University (Pampanga State U) – College of Hospitality and Tourism Management (CHTM) staged a taste of diversity through the fusion of Kapampangan heirloom dishes with Asian flavors during the Pamaglutu Year 3 held at the University Hostel on October 13, 2025.
The CHTM introduced Kapampangan cuisine in fusion with Asian flavors to showcase its diversity and uniqueness among other cuisines, as they hope to establish their college internationally by sending students abroad through internships and exchange programs.
“Today, I am happy because everything reflects our college’s advocacy to promote Kapampangan cuisine. We need to preserve it, taste it, pass it on, and cook it — cook it with our hearts,” said Mike Haizon David, chairperson of the Bachelor of Science in Hospitality Management program.
As part of this year’s event highlights, the two Thai faculty exchange participants, Chairat Changchuang and Pornthathiya Na Songkhla, from Trat Technical College conducted a live cooking demonstration of the well-known Thai dishes Pad Thai and Mango Sticky Rice, using ingredients brought from their home country.
“I want the students to realize how Thailand preserves its authentic food, and now we also want to promote Kapampangan cuisine for future generations — so they can cook it, taste it, preserve it, and pass it on from generation to generation,”David shared.
Furthermore, Manuela Cherry Passion Tan, president of Apag Marangle Restaurant—a local dining establishment known for serving Filipino cuisines, particularly famous Kapampangan dishes—gave a lecture on the soul of Kapampangan cuisine: heritage, passion, and innovation.
“Kailangan nating pangalagaan ang ating Kapampangan cuisine. When we talk about Kapampangan cuisine, it's not just food—it is a reflection of our history,” Tan stated.
Aside from the cooking demo, the event series will also feature lessons on Basic Thai language and culture, conducted by Changchuang and Songkhla as part of their participation in the exchange program.
